Cobalt also shares a stretch of beach with indigenous sea turtles – the hotel’s concierge can advise on the best times to watch the hatchling’s return to the sea.
Open for breakfast, lunch, and dinner, Cobalt’s menu selections include Oyster on the Half Shell with cocktail sauce, fresh horseradish, and lemon; Escolar Ceviche with scallions, cucumber, red onion, cilantro, blood orange, and tomatoes served with a wonton crisp; Osceola Farm Greens with candied walnuts, figs, red radish, and buttermilk blue served with a sherry vinaigrette; Creekstone’s Beef Capaccio with white truffle oil, aged parmesan, and lemon arugula; Bacon Wrapped Dates, with Boursin cheese and a red wine gastrique; Grilled Tuna marinated in oolong with quinoa and a napa cabbage slaw served with ginger dressing; Seared Scallops with saffron risotto; Brick Chicken; Jack Daniels Cake with a bourbon butter glaze served with cola ice cream; Key Lime Sundae with key lime gelato, whipped cream, and brown butter served with a white chocolate macadamia nut cookie; and Cinnamon Panna Cotta served with warm caramel and a Fall fruit compote consisting of apples, cranberries, and apricots.
The menu at Heaton’s Reef Bar & Grill includes Truffle Fries with garlic aioli and sea salt; Fried Lobster Tacos with tropical slaw and cilantro aioli; the Local Market Fish Sandwich with arugula, tomato, red onion, and a Cajun remoulade; and signature mixed drinks like the Pineapple Express, with Appleton’s Rum, Myer’s Dark Rum, amaretto, pineapple and orange juices, and grilled pineapple simple syrup.
Cobalt also offers private dining experiences for parties or more intimate occasions in diverse locations throughout the resort, which can accommodate up to one hundred and seventy people and can include fire pits, floor to ceiling windows, or dramatic pergolas.
